Caleb & Jaimie Mackey Owners

Caleb and Jaimie Mackey have always dreamed of owning and operating a restaurant and wine bar, and when the opportunity presented itself - right down the street from their house - they jumped at the chance. They couldn’t imagine anything better than getting to follow their dream in the town they call home, surrounded and supported by their friends and neighbors.

The Mackeys have lived in Eagle since 2017, but their roots here run deep. Jaimie and her family have been spending every spare moment in Eagle for 24 years (she and her brothers even attended Anderson Camp in Dotsero in the early 2000s!), and Caleb has called Colorado home for over a decade. The couple were married in Eagle in 2016, and always knew it would be the perfect place to put down roots, start a business, and raise a family. A year after getting married, they moved to Eagle, and in August of 2019 they welcomed their daughter, Bea. They are thrilled that she will get to grow up in a place they’ve loved for so long. 

Caleb and Jaimie bring to The Assembly a background in small business entrepreneurship, customer service, and hospitality. Before moving to Eagle, Caleb owned and operated the Rocky Mountain Chocolate Factory in Silverthorne. Jaimie was an editor at BRIDES Magazine in New York City before moving to Colorado and joining the team at Go Bella, a luxury event design and planning company based in Breckenridge. 

The Mackeys are passionate about cooking delicious food, tasting exciting wines, and gathering people around their table to share what they’ve discovered. They are so excited to do the same at The Assembly, welcoming their community into a space designed for exploration, innovation, and gathering with friends and loved ones.
